ABOUT US

We are a small, family run maple farm located in the sweet hills of Somerset County, Pennsylvania.  We tap our family's trees to create small, quality batches of Pure Pennsylvania Maple Syrup. The Hosselrode family began producing maple syrup in 2008.  What started out as a small family hobby, slowly turned into a family business.  Over the years the family maple camp has gone from about 100 taps to over 3,000. Because of this tremendous growth, the camp has become more efficient.  A small 2’ x 6’ wood fired evaporator was replaced with a 4’ x 12’ oil fired evaporator.  A small cone bag filter was replaced with a larger filter press.  A Reverse Osmosis machine was added to reduce boiling time.  Even though the operation has grown and new equipment has been added, the same family owns, taps, boils, and makes all the maple products from the camp.  This family-run maple camp sees the sap from their trees to your table, ensuring the highest quality, all-natural maple syrup.

HOW IS SYRUP MADE?

Making maple syrup may seem like a simple process- drill a hole in a tree and boil the sap, but there is a bit more to the process.  A hole is drilled into a maple tree and a spile is inserted into that hole.  The spile either drips into a bucket or is connected to tubing, which is ran to a centralized tank where sap is collected. Every year the maple season and the amount of sap that is collected all depends on the weather.  Sap runs out of the drilled hole when the nighttime temperatures are below freezing, and the daytime temperatures are above freezing. The sap is gathered and taken to the sugar camp. When the sap arrives at the camp, it goes through a Reverse Osmosis machine, which removes water out of the sap before it is boiled. The Reverse Osmosis machine takes about 75% of the water out of the sap, leaving behind higher concentrated sap.  This higher concentrated sap boils in a fraction of the time. The sap is boiled until the sugar content is 66.5 brix, at this point the sap is now syrup! The syrup is then filtered and canned. Based on our trees and experience, it takes between 45-65 gallons of sap to make 1 gallon of syrup.  As you can see this process is a labor of love, one the Hosselrode family loves completing together!
